A bio-generative music performance by Sarc:o
Kallistik and Jonas Kastenhuber present a unique collaboration with Sarc:o, sound designer and producer behind Terroir, the world’s first concert you can drink.
Terroir is a live bio-generative music performance in dialogue with wine and spirits.
Through conductive sensors and immersion microphones, the micro-variations of of each liquid — its conductivity, movement, and response to contact — are translated into evolving sonic processes. The artist interacts with these signals, shaping electronic landscapes that emerge from the behaviour of the material itself and transform alongside it.
The composition unfolds entirely in real time, allowing the physical properties of the liquid to structure the music.
Each performance is unique and accompanied by the tasting of the wines that generate the sound, creating an immersive experience where listening, taste and presence converge.
Like the terroir from which wine and spirit draws its identity, the music reflects the conditions of its environment: a sonic landscape born from matter and place.

Experience
Terroir unfolds as a four-movement live composition, following the progression:
Opening — Landscape
Subtle resonances introduce the acoustic space through glasses, air and surfaces.
Pouring — Extraction
Sensors and microphones capture the microscopic behaviour of the liquid as it moves and interacts with the environment.
Interaction — Transformation
The performer manipulates the matter, expanding the sonic palette through physical interaction.
Resonance — Integration
The materials settle into a final collective texture where the acoustic identity of the wine fully emerges. The cycle between matter, sound and perception is completed with the tasting.
The audience witnesses the gestures generating the sound, creating an intimate listening environment where matter, perception and performance intersect.

Bio
Sarc:o is the sound performance project of Francesco Sarcone.
His work explores the relationship between matter and sound, transforming physical materials and everyday gestures into musical structures. Combining acoustic experimentation, electronic processing and live interaction with objects, Sarc:o develops performances where composition emerges directly from the behaviour of the material world.
His research moves between sound art, performance and sensory experience, often exploring how organic materials — liquids, surfaces and environments — can become instruments for live music creation.
Alongside his artistic practice, Francesco Sarcone has developed interdisciplinary projects presented across Europe and in collaboration with brands including Barilla, Volvo and Smeg.
